Vegan Chocolate Brownies — Made Out Of Black Beans

Yield: 12 brownies

Ingredients

2 (15-ounce) cans black beans, rinsed and dried well

4 tbsp. unsweetened cocoa powder

1 cup rolled oats

1 tsp. Kosher salt

3⁄4 cup agave syrup

1⁄2 cup coconut oil, melted

4 tsp. vanilla extract

1 tsp. baking powder

1/8 cup chocolate chips, optional

Directions

  1. Preheat the oven to 350oF. Grease a 7×11-inch glass baking dish.

  2. Combine all of the ingredients in a food processor.

  3. Blend well for 5 minutes and until all ingredients are thoroughly combined, stopping periodically to push the batter from the sides. After its blended, use a spatula and fold in chocolate chips, if desired.

  4. Pour the batter into the prepared pan. Bake for 18 to 20 minutes. Remove the pan from the oven and cool 8 to 10 minutes. Refrigerate so the brownies develop a rm texture.

Per serving (1 brownie): 220 calories, 7g fat, 1.5g saturated fat, 80mg cholesterol, 130mg sodium, 0 carbohydrates, 0g ber, 35g protein
