Makes 2 1/2 dozen cookies

2/3 cup sweetened condensed milk
1 egg white
1 1/2 teaspoons vanilla extract
Scant 1/4 teaspoon orange extract
1/8 teaspoon salt
3 1/2 cups shredded unsweetened coconut
1/2 cup semisweet chocolate chips

1) Preheat oven to 325 degrees. Line a baking sheet with parchment paper and set aside.

2) Whisk the condensed milk, egg white, vanilla, orange extract and salt in a medium bowl until well combined. Fold in the coconut, followed by the chocolate chips.

3) Drop tablespoonfuls of batter onto the baking sheet. Bake until cookies are lightly brown, 20-25 minutes. Cool slightly, then peel cookies from the parchment. Store leftovers in an airtight container.
