In this episode of “Est Gezunterheyt” (Eat In Good Health), Yiddish food scholar and gourmet chef Eve Jochnowitz and I demonstrate how to make cabbage strudel — a traditional dish for Sukkot.
Strudel — a Hungarian pastry — is usually sweet, filled with apples and sugar or raisins and nuts.
In this clip, we show you how to make a savory strudel that can serve as the main dish of the festive meal eaten in the sukkah.
My favorite part of the clip come towards the end, when we stretch out the dough in the air together. I’d never done this with dough before. It was kind of a magical moment and the result was amazing.
