Sukkot isn’t just a festival that resembles glamorous camping, or “glamping,” with its abundant (sometimes too abundant) meals in a hut.
It’s also a holiday that happens to coincide with the harvest season. Like Rosh Hashanah’s reliance on symbolic foods to guarantee a new year, Sukkot has some symbolic foods of its own: Stuffed dishes, to symbolize a “stuffed,” or plentiful harvest.
Since the tradition is so vague about its implementation, any kind of stuffed food really works: From regional dishes like stuffed cabbage (if you’re Ashkenazic), stuffed grape leaves (if you’re Sephardic) and stuffed shells (if you’re American), to stuffed entrees like stuffed veal and stuffed dessert pastries like sambusak.
